Veggie Egg Fried Rice

Ingredients
- 200g cooked brown rice (leftovers are ideal)
- 2 eggs
- a large handful of frozen mixed vegetables
- half a small onion, chopped
- 2 tsp soy sauce
- 2 tsp rapeseed oil
Method
- 1Heat the oil in a wok or large pan and fry the onion for 2 minutes.
- 2Add the frozen veg and cook for 3 minutes.
- 3Push everything to one side, crack the eggs into the gap and scramble them.
- 4Add the rice and soy sauce and stir-fry for 3 minutes until piping hot.

- Cook rice from scratch: 65g dry rice makes about 200g cooked.
