Ingredients

  • half a tin of green or brown lentils, drained
  • 1 carrot, diced
  • 1 celery stick, diced
  • half an onion, diced
  • 1 small potato, diced
  • 1 garlic clove
  • 1 tsp curry powder
  • 1 tsp rapeseed oil

Method

  1. 1Fry the onion, carrot and celery in the oil for 5 minutes.
  2. 2Stir in the garlic and curry powder for 30 seconds.
  3. 3Add the potato, lentils and 400ml water. Bring to the boil.
  4. 4Simmer for 15 minutes until the potato is soft, then mash some of it against the pan to thicken the soup.

  • Any root veg can replace the potato or carrot. Use what is cheapest.
