Ingredients
- 60g dry bulgur wheat (150g cooked)
- 1 carrot, diced
- 80g swede or turnip, diced
- half an onion, diced
- 1 celery stick, diced
- a third of a tin of kidney beans, drained
- 1 tsp rapeseed oil
- 1 tsp curry powder
Method
- 1Fry the onion, carrot, celery and swede in the oil for 5 minutes.
- 2Stir in the curry powder, then add the bulgur and 300ml water.
- 3Simmer for 10 minutes, then stir in the beans and heat through for 2 minutes.
- 4Add a splash more water if it gets too thick.
