Ingredients
- 70g turkey mince
- a quarter of a tin of lentils, drained
- a large handful of shredded cabbage
- 1 small carrot, diced
- half a celery stick, diced
- half a small onion, diced
- 1 large tomato, chopped
- 1 tsp curry powder
Method
- 1Brown the turkey with the onion in a dry non-stick pan for 5 minutes.
- 2Add the carrot, celery, cabbage, tomato, curry powder and 500ml water.
- 3Simmer for 12 minutes, add the lentils and cook for 3 minutes more.
Swaps and tips
- Leave out the turkey and add another 100g lentils for a vegan soup.
