Ingredients
- 80g dry red lentils (200g cooked)
- half a small onion, chopped
- 1 large tomato, chopped
- 1 garlic clove
- 1 tsp curry powder
- 1 tsp rapeseed oil
- 100g cooked rice
Method
- 1Fry the onion in the oil for 3 minutes, then add the garlic and curry powder.
- 2Add the tomato, lentils and 400ml water.
- 3Simmer for 15 minutes, stirring now and then, until thick.
- 4Serve with the rice.
