Ingredients
- 1 medium leek, sliced
- 2 small potatoes, diced
- half a tin of cannellini beans, drained
- 100ml semi-skimmed milk
- 1 tsp rapeseed oil
Method
- 1Soften the leek in the oil for 4 minutes.
- 2Add the potato, beans and 400ml water and simmer for 15 minutes.
- 3Blend until smooth with a stick blender.
- 4Stir in the milk, warm through and season with pepper.
