Ingredients
- 2 eggs
- a third of a tin of cannellini beans, drained
- a handful of frozen spinach
- 1 large tomato, chopped
- a few chunks of cucumber
- 2 tsp lemon juice
Method
- 1Boil the eggs for 8 minutes, cool and peel.
- 2Warm the beans and spinach in a pan for 3 minutes.
- 3Spoon into a bowl with the tomato and cucumber, top with the halved eggs and lemon.
