Ingredients
- half a tin of chickpeas, drained
- a large handful of frozen spinach
- 1 large tomato, chopped
- half an onion, chopped
- 1 garlic clove
- 1 tsp ground cumin
- 100g cooked brown rice
Method
- 1Soften the onion in a splash of water in a pan for 4 minutes, then add the garlic and cumin.
- 2Add the tomato and chickpeas with 100ml water and simmer for 6 minutes.
- 3Stir in the spinach for 3 minutes.
- 4Serve over the rice with a squeeze of lemon if you have it.
