Ingredients
- 1 large baking potato
- half a tin of cannellini beans, drained
- a generous handful of grated cheddar
- a handful of salad leaves
Method
- 1Prick the potato and microwave for 8 to 10 minutes until soft.
- 2Warm the beans in a pan or the microwave for 1 minute.
- 3Split the potato, spoon over the beans and top with cheese.
- 4Serve with the salad leaves.
