Ingredients
- 1 small sweet potato, in small cubes
- 2 eggs
- half a small onion, diced
- a third of a pepper, diced
- 2 tsp rapeseed oil
Method
- 1Microwave the sweet potato cubes for 3 minutes to soften.
- 2Fry the onion, pepper and sweet potato in the oil for 8 minutes until browned.
- 3Make two wells, crack in the eggs and cover the pan.
- 4Cook 3 to 4 minutes until the whites are set.
