Ingredients
- 60g gram (chickpea) flour, about 8 tbsp
- half a small onion, finely chopped
- a handful of frozen spinach, defrosted and squeezed dry
- 1 small tomato, finely chopped
- a pinch of ground cumin
- 2 tsp rapeseed oil
Method
- 1Whisk the flour with 120ml water and the cumin into a smooth batter.
- 2Stir in the onion, spinach and tomato.
- 3Heat a little of the oil in a non-stick pan and pour in half the batter.
- 4Cook 3 to 4 minutes each side until golden. Repeat with the rest.

- Serve with a spoon of yoghurt if you eat dairy.
