Ingredients
- 2 eggs
- 5 mushrooms, sliced
- a handful of frozen spinach
- 1 tomato, chopped
- 3 tbsp cannellini beans
- 1 slice wholemeal bread
Method
- 1Dry-fry the mushrooms for 4 minutes, add the tomato, beans and spinach and warm through.
- 2Scramble the eggs in a separate non-stick pan.
- 3Toast the bread and serve everything together.
