Ingredients
- 4 eggs
- 1 medium cooked potato, sliced
- a large handful of frozen spinach, defrosted and squeezed dry
- half an onion, sliced
- a small handful of grated cheddar
- 1 tsp rapeseed oil
Method
- 1Fry the onion in the oil in an ovenproof pan for 4 minutes.
- 2Add the potato and spinach and stir for 2 minutes.
- 3Pour in the beaten eggs, scatter over the cheese and cook on low for 8 minutes.
- 4Finish under a hot grill for 3 minutes until golden.
