Ingredients
- half a tin of lentils, drained
- 1 medium potato, diced small
- a big handful of frozen spinach
- half an onion, chopped
- 1 large tomato, chopped
- 1 garlic clove
- 2 tsp curry powder
- 1 tsp rapeseed oil
- 120g cooked rice
Method
- 1Fry the onion in the oil for 4 minutes, then add the garlic and curry powder for 30 seconds.
- 2Add the potato, tomato and 250ml water and simmer for 10 minutes.
- 3Stir in the lentils and spinach and cook for 5 minutes until thick.
- 4Serve with the rice.
