Sardine, Tomato & Kale Pasta

Ingredients

  • 80g dry wholewheat pasta (200g cooked)
  • 1 tin sardines, drained
  • 2 large tomatoes, chopped
  • 1 garlic clove
  • a small onion, chopped
  • a handful of kale, shredded
  • 1 tsp rapeseed oil

Method

  1. 1Cook the pasta as the packet says, adding the kale for the last 2 minutes.
  2. 2Meanwhile fry the onion and garlic in the oil for 3 minutes, add the tomatoes and cook for 6 minutes.
  3. 3Break the sardines into the sauce and warm through.
  4. 4Drain the pasta, toss with the sauce and finish with black pepper.

Swaps and tips

  • Use tinned mackerel instead of sardines, or cabbage instead of kale.
