Ingredients
- half a tin of lentils, drained
- 1 carrot, diced
- half an onion, diced
- half a celery stick, diced
- 2 medium potatoes
- 1 large tomato, chopped
- a handful of frozen peas
- 1 tsp rapeseed oil
Method
- 1Boil the potatoes for 15 minutes, drain and mash with pepper.
- 2Fry the onion, carrot and celery in the oil for 6 minutes.
- 3Add the tomato, lentils, peas and 100ml water and simmer for 8 minutes.
- 4Top with the mash and bake at 200C (180C fan) for 15 minutes.
