Ingredients
- 1 nest of egg noodles (about 200g cooked)
- 2 eggs
- a large handful of shredded cabbage
- 1 carrot, cut into matchsticks
- half a small onion, sliced
- a handful of frozen peas
- 2 tsp soy sauce
- 2 tsp rapeseed oil
Method
- 1Cook the noodles as the packet says, drain and set aside.
- 2Stir-fry the onion, carrot and cabbage in the oil for 4 minutes.
- 3Push to the side, scramble the eggs in the gap, then add the peas and noodles.
- 4Toss with the soy sauce for 2 minutes until hot.
