A thick, gently spiced soup-stew of red lentils, cauliflower and carrot. Easy on the stomach and very cheap.

Ingredients
- 80g dry red lentils (200g cooked)
- a third of a cauliflower, in florets
- half an onion, chopped
- 1 small carrot, diced
- 2 tsp curry powder
- 100ml semi-skimmed milk
- 1 tsp rapeseed oil
- 100g cooked rice
Method
- 1Fry the onion in the oil for 3 minutes, add the curry powder.
- 2Add the lentils, cauliflower, carrot and 500ml water and simmer for 18 minutes.
- 3Stir in the milk and warm through.
- 4Serve with the rice.
