A vegan bolognese made with brown lentils and fresh tomatoes over wholewheat pasta. Very high in fibre.

Ingredients
- half a tin of lentils, drained
- 70g dry wholewheat spaghetti (180g cooked)
- 1 carrot, grated
- half an onion, chopped
- 2 large tomatoes, chopped
- 1 garlic clove
- 1 tsp rapeseed oil
Method
- 1Fry the onion and carrot in the oil for 5 minutes, add the garlic.
- 2Add the tomatoes and 100ml water and simmer for 8 minutes.
- 3Stir in the lentils and cook for 4 minutes.
- 4Cook the pasta, drain and serve with the sauce.
